Ingredients
  

  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a baking pan.
  • In a large bowl, combine flour, cocoa powder, baking soda, and salt.
  • In another bowl, whisk together sugar, brown sugar, oil, eggs, and vanilla.
  • Stir in the grated zucchini into the wet mixture.
  • Gradually add the dry ingredients to the wet mixture and stir until just combined.
  • Pour the batter into the prepared baking pan and spread evenly.
  • Bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
  • Let the brownies cool in the pan for 10 minutes, then transfer to a wire rack.
  • Once cooled, cut into squares and serve.
  • Store leftovers in an airtight container.
