- 1 can 5 oz tuna, drained
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 celery stalk diced
- 2 tablespoons red onion finely chopped
- Salt and pepper to taste
- 2 slices of bread whole grain or white
- Leafy greens lettuce or spinach
- Tomato slices optional
Open the can of tuna and drain the liquid.
In a medium bowl, combine the drained tuna, mayonnaise, and Dijon mustard.
Add lemon juice, diced celery, and chopped red onion to the mixture.
Season with salt and pepper to taste, and mix well.
Lay the slices of bread on a clean surface.
Spread the tuna salad mixture onto one slice of bread.
Add leafy greens on top of the tuna mixture.
If desired, layer tomato slices over the greens.
Top with the second slice of bread.
Cut the sandwich in half and serve immediately.
