- 2 lbs ground beef
- 1 cup breadcrumbs
- 1 small onion finely chopped
- 2 cloves garlic minced
- 2 eggs
- 1/4 cup milk
- 1/4 cup BBQ sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1/2 cup ketchup for topping
Preheat your smoker to 225°F (107°C).
In a large bowl, combine ground beef, breadcrumbs, chopped onion, and minced garlic.
Add the eggs and milk, mixing well until fully combined.
Stir in BBQ sauce, salt, black pepper, and smoked paprika.
Shape the mixture into a loaf and place it on parchment paper.
Transfer the loaf to the smoker, placing it directly on the grates.
Smoke for about 1 hour, or until the internal temperature reaches 160°F (71°C).
Brush ketchup on top of the meatloaf during the last 15 minutes of cooking.
Remove from smoker and let it rest for 10 minutes before slicing.
