Ingredients
  

  • 4 cups rhubarb chopped
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 cup oats
  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/2 cup unsalted butter melted

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the chopped rhubarb with sugar, cornstarch, and lemon juice.
  • Transfer the rhubarb mixture to a greased baking dish.
  • In another bowl, mix oats, flour, brown sugar, and cinnamon.
  • Drizzle melted butter over the oat mixture and stir until crumbly.
  • Evenly spread the oat mixture over the rhubarb.
  • Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown.
  • Remove from the oven and let it cool slightly before serving.
  • Serve warm, ideally with a scoop of vanilla ice cream.
