  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh raspberries
  • Powdered sugar for dusting

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, mix melted butter, eggs, and vanilla until well combined.
  • Pour the wet ingredients into the dry ingredients, stirring gently to combine.
  • Fold in the fresh raspberries carefully to avoid breaking them.
  • Use a spoon or ice cream scoop to fill each muffin cup about 2/3 full.
  • Bake in the preheated oven for 20-25 minutes, or until a toothpick comes out clean.
  • Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack.
  • Dust with powdered sugar before serving if desired.
