Ingredients
  

  • 3-4 pounds chuck roast
  • 4 cups beef broth
  • 4 medium carrots chopped
  • 3 potatoes diced
  • 1 onion quartered
  • 3 cloves garlic minced
  • 2 tablespoons tomato paste
  • 2 teaspoons dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Preheat your oven to 275°F (135°C).
  • Season the chuck roast with salt and pepper.
  • Heat a large Dutch oven over medium-high heat.
  • Sear the roast for about 4-5 minutes on each side until browned.
  • Remove the roast and set aside.
  • In the same pot, add onions and garlic; sauté until fragrant.
  • Stir in tomato paste and thyme, cooking for another minute.
  • Pour in the beef broth and bring to a simmer.
  • Return the roast to the pot, adding carrots and potatoes around it.
  • Cover and transfer to the oven; cook for 3-4 hours until tender.
