Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup warm water
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 teaspoons active dry yeast
  • 1 tablespoon olive oil

Instructions
 

  • In a small bowl, mix warm water, sugar, and yeast. Let sit for 10 minutes until frothy.
  • In a large mixing bowl, combine flour and salt, then create a well in the center.
  • Pour the yeast mixture into the well along with olive oil.
  • Mix until a dough forms, then knead on a floured surface for about 5-7 minutes.
  • Place the dough in a greased bowl, cover, and let it rise for 30 minutes in a warm area.
  • Preheat your oven to 475°F (245°C) and place a baking sheet inside to heat up.
  • Punch down the risen dough and divide it into 6 equal pieces.
  • Roll each piece into a ball and flatten into circles about 1/4 inch thick.
  • Carefully place the pitas on the hot baking sheet and bake for 5-7 minutes until puffed and lightly golden.
  • Remove from the oven and cover with a clean towel to keep warm.
