Ingredients
  

  • 2 medium red onions thinly sliced
  • 1 cup apple cider vinegar
  • 1 cup water
  • 1 tablespoon sugar
  • 1 tablespoon salt
  • 1 teaspoon black peppercorns
  • 1 teaspoon mustard seeds optional
  • 1 bay leaf optional

Instructions
 

  • Thinly slice the red onions and place them in a glass jar.
  • In a small saucepan, combine apple cider vinegar, water, sugar, and salt.
  • Heat the mixture over medium heat until the sugar and salt dissolve.
  • Remove from heat and add black peppercorns and mustard seeds if using.
  • Pour the hot liquid over the sliced onions in the jar.
  • Add the bay leaf if desired.
  • Press the onions down to ensure they are submerged.
  • Let the jar cool to room temperature.
  • Cover the jar and refrigerate for at least 1 hour.
