- 2 medium red onions thinly sliced
- 1 cup apple cider vinegar
- 1 cup water
- 1 tablespoon sugar
- 1 tablespoon salt
- 1 teaspoon black peppercorns
- 1 teaspoon mustard seeds optional
- 1 bay leaf optional
Thinly slice the red onions and place them in a glass jar.
In a small saucepan, combine apple cider vinegar, water, sugar, and salt.
Heat the mixture over medium heat until the sugar and salt dissolve.
Remove from heat and add black peppercorns and mustard seeds if using.
Pour the hot liquid over the sliced onions in the jar.
Add the bay leaf if desired.
Press the onions down to ensure they are submerged.
Let the jar cool to room temperature.
