Onion Soup

A comforting and flavorful onion soup made with caramelized onions, beef broth, and topped with melted cheese and croutons.

Ingredients
  

  • 4 large onions thinly sliced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 4 cups beef or vegetable broth
  • 1 cup dry white wine
  • Salt and pepper to taste
  • 8 slices of baguette
  • 1 cup grated Gruyère cheese

Instructions
 

  • Heat butter and olive oil in a large pot over medium heat.
  • Add sliced onions and cook until softened, about 10 minutes.
  • Sprinkle sugar over the onions and continue cooking until caramelized, about 20 minutes.
  • Pour in the white wine, scraping any browned bits from the bottom of the pot.
  • Add broth and bring to a boil, then reduce heat and simmer for 15 minutes.
  • Season with salt and pepper to taste.
  • While soup simmers, preheat your oven to 350°F (175°C).
  • Arrange baguette slices on a baking sheet and toast until golden.
  • In oven-safe bowls, ladle soup and top with toasted baguette and cheese.
  • Bake in the oven until the cheese is melted and bubbly, about 10 minutes.
