Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1 cup chopped apples
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, and salt.
  • In another bowl, mix the brown sugar, granulated sugar, eggs, vegetable oil, and vanilla extract until well combined.
  • Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  • Fold in the grated carrots, chopped apples, raisins, and nuts until evenly distributed.
  • Divide the batter among the muffin cups, filling each about 2/3 full.
  • Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove from the oven and let the muffins cool in the tin for 5 minutes.
  • Transfer the muffins to a wire rack to cool completely.
  • Enjoy warm or store for later!
