- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 cup unsalted butter chilled and diced
- 6-8 tablespoons ice water
- 4 cups thinly sliced apples Granny Smith or Honeycrisp
- 3/4 cup sugar
- 2 teaspoons cinnamon
- 1 teaspoon nutmeg
- 1 tablespoon lemon juice
- 1 egg for egg wash
Preheat your oven to 375°F (190°C).
In a large bowl, mix flour and salt.
Add chilled butter and blend until the mixture resembles coarse crumbs.
Stir in ice water, a tablespoon at a time, until the dough forms a ball.
Wrap in plastic wrap and refrigerate for 30 minutes.
In another bowl, combine sliced apples, sugar, cinnamon, nutmeg, and lemon juice.
Roll out the dough on a floured surface and cut rounds for the pie crusts.
Place the rounds in a greased muffin tin.
Spoon the apple mixture into each crust.
Top with lattice strips or a whole crust, and brush with egg wash.
Bake for 25-30 minutes until golden brown.
Let cool slightly before removing from the tin.
