- 4 large potatoes peeled and cubed
- 1 cup sour cream
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1/4 cup butter melted
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup breadcrumbs
- 2 tablespoons chopped fresh chives optional
Preheat your oven to 350°F (175°C).
Boil the cubed potatoes in salted water until tender, about 15-20 minutes.
Drain the potatoes and return them to the pot.
Mash the potatoes until smooth.
Stir in sour cream, milk, melted butter, garlic powder, salt, and pepper.
Fold in half of the shredded cheese until well combined.
Transfer the mashed potatoes to a greased baking dish.
Sprinkle the remaining cheese on top.
Mix breadcrumbs with melted butter and sprinkle over the cheese.
Bake for 30-35 minutes until the top is golden brown.
