- 4 large eggs
- 2 tablespoons mayonnaise
- 1/4 cup celery chopped
- 1/4 cup red onion chopped
- 1 teaspoon Dijon mustard
- Salt to taste
- Pepper to taste
- 1 tablespoon fresh herbs dill or parsley, chopped
- 4 slices of bread
Boil the eggs in a pot of water for about 10 minutes. Cool and peel them.
Chop the eggs into small pieces and place them in a mixing bowl.
Add mayonnaise to the bowl.
Finely chop celery and red onion, then add to the eggs.
Mix in Dijon mustard for flavor.
Season with salt and pepper to taste.
Stir in fresh herbs for added freshness.
Prepare slices of bread.
