Ingredients
  

  • 4 large eggs
  • 2 tablespoons mayonnaise
  • 1/4 cup celery chopped
  • 1/4 cup red onion chopped
  • 1 teaspoon Dijon mustard
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon fresh herbs dill or parsley, chopped
  • 4 slices of bread

Instructions
 

  • Boil the eggs in a pot of water for about 10 minutes. Cool and peel them.
  • Chop the eggs into small pieces and place them in a mixing bowl.
  • Add mayonnaise to the bowl.
  • Finely chop celery and red onion, then add to the eggs.
  • Mix in Dijon mustard for flavor.
  • Season with salt and pepper to taste.
  • Stir in fresh herbs for added freshness.
  • Prepare slices of bread.
  • Spread the egg salad mixture between two slices of bread.
  • Serve immediately and enjoy!
