Ingredients
  

  • 2 pounds pork tenderloin
  • 1 cup low-sodium chicken broth
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 2 teaspoons dried thyme
  • 1 teaspoon rosemary
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 medium potatoes quartered
  • 3 carrots sliced

Instructions
 

  • Season the pork tenderloin with salt, pepper, paprika, thyme, and rosemary.
  • Heat olive oil in a skillet over medium-high heat and brown the pork on all sides.
  • Transfer the pork to the crockpot.
  • Add minced garlic and chicken broth to the crockpot.
  • Arrange quartered potatoes and sliced carrots around the pork.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • Once cooked, remove the pork and let it rest for 10 minutes before slicing.
  • Serve the pork with veggies and drizzle cooking juices on top.
