- 4 chicken thighs bone-in, skinless
- 1 cup BBQ sauce
- 1 onion sliced
- 2 cloves garlic minced
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon cayenne pepper optional
- Fresh parsley for garnish
Heat olive oil in a skillet over medium heat.
Sear the chicken thighs for about 3 minutes on each side until browned.
Remove the chicken from the skillet and place it in the crockpot.
Sauté the sliced onions in the same skillet until translucent.
Add minced garlic and sauté for another minute.
Pour the sautéed onions and garlic over the chicken in the crockpot.
Mix BBQ sauce, smoked paprika, salt, black pepper, and cayenne in a bowl.
Pour the BBQ sauce mixture over the chicken and onions.
Cover the crockpot and set it to low for 6-8 hours or high for 3-4 hours.
Once cooked, shred the chicken with two forks and mix it with the sauce before serving.
