Ingredients
  

  • 4 chicken thighs bone-in, skinless
  • 1 cup BBQ sauce
  • 1 onion sliced
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper optional
  • Fresh parsley for garnish

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Sear the chicken thighs for about 3 minutes on each side until browned.
  • Remove the chicken from the skillet and place it in the crockpot.
  • Sauté the sliced onions in the same skillet until translucent.
  • Add minced garlic and sauté for another minute.
  • Pour the sautéed onions and garlic over the chicken in the crockpot.
  • Mix BBQ sauce, smoked paprika, salt, black pepper, and cayenne in a bowl.
  • Pour the BBQ sauce mixture over the chicken and onions.
  • Cover the crockpot and set it to low for 6-8 hours or high for 3-4 hours.
  • Once cooked, shred the chicken with two forks and mix it with the sauce before serving.
