- 4 lbs corned beef brisket
- 1 tablespoon mustard seeds
- 1 tablespoon black peppercorns
- 1 tablespoon coriander seeds
- 4 cloves garlic crushed
- 1 onion quartered
- 4 carrots chopped
- 4 potatoes quartered
- 1 head of cabbage cut into wedges
- Water enough to cover the beef
Rinse the corned beef under cold water to remove excess salt.
Place the brisket in a large pot and cover it with water.
Add mustard seeds, black peppercorns, coriander seeds, garlic, and onion to the pot.
Bring the pot to a boil over medium-high heat.
Reduce the heat to a simmer, cover, and cook for 3 hours.
Add the carrots and potatoes to the pot.
Continue to simmer for another 30 minutes.
Add the cabbage and cook until tender, about 15-20 minutes.
Remove the corned beef from the pot and let it rest for 10 minutes before slicing.
Serve with the vegetables and a drizzle of the cooking liquid.
