Ingredients
  

  • 4 lbs corned beef brisket
  • 1 tablespoon mustard seeds
  • 1 tablespoon black peppercorns
  • 1 tablespoon coriander seeds
  • 4 cloves garlic crushed
  • 1 onion quartered
  • 4 carrots chopped
  • 4 potatoes quartered
  • 1 head of cabbage cut into wedges
  • Water enough to cover the beef

Instructions
 

  • Rinse the corned beef under cold water to remove excess salt.
  • Place the brisket in a large pot and cover it with water.
  • Add mustard seeds, black peppercorns, coriander seeds, garlic, and onion to the pot.
  • Bring the pot to a boil over medium-high heat.
  • Reduce the heat to a simmer, cover, and cook for 3 hours.
  • Add the carrots and potatoes to the pot.
  • Continue to simmer for another 30 minutes.
  • Add the cabbage and cook until tender, about 15-20 minutes.
  • Remove the corned beef from the pot and let it rest for 10 minutes before slicing.
  • Serve with the vegetables and a drizzle of the cooking liquid.
