Ingredients
  

  • 3-4 lbs chuck roast
  • 2 tablespoons olive oil
  • 1 onion chopped
  • 4 cloves garlic minced
  • 4 carrots sliced
  • 3 potatoes cubed
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • Fresh herbs thyme, rosemary

Instructions
 

  • Preheat your oven to 300°F (150°C).
  • Season the chuck roast with salt and pepper.
  • Heat olive oil in a large Dutch oven over medium-high heat.
  • Sear the roast on all sides until browned, about 4-5 minutes per side.
  • Remove the roast and set aside.
  • In the same pot, add chopped onion and sauté until translucent.
  • Stir in minced garlic and cook for 1 minute.
  • Add carrots and potatoes, mixing well.
  • Pour in beef broth, tomato paste, and Worcestershire sauce.
  • Return the roast to the pot, cover, and place in the oven.
  • Cook for 3-4 hours until the meat is fork-tender.
  • Let it rest for 10 minutes before slicing.
