- 3-4 lbs chuck roast
- 2 tablespoons olive oil
- 1 onion chopped
- 4 cloves garlic minced
- 4 carrots sliced
- 3 potatoes cubed
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- Fresh herbs thyme, rosemary
Preheat your oven to 300°F (150°C).
Season the chuck roast with salt and pepper.
Heat olive oil in a large Dutch oven over medium-high heat.
Sear the roast on all sides until browned, about 4-5 minutes per side.
Remove the roast and set aside.
In the same pot, add chopped onion and sauté until translucent.
Stir in minced garlic and cook for 1 minute.
Add carrots and potatoes, mixing well.
Pour in beef broth, tomato paste, and Worcestershire sauce.
Return the roast to the pot, cover, and place in the oven.
Cook for 3-4 hours until the meat is fork-tender.
Let it rest for 10 minutes before slicing.
