Ingredients
  

  • 1 ½ cups all-purpose flour
  • ½ cup sugar
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • Zest of 1 lemon
  • 2 tablespoons lemon juice

Instructions
 

  • Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  • In a large bowl, whisk together flour, sugar, baking soda, baking powder, and salt.
  • In another bowl, combine vegetable oil, egg, vanilla extract, lemon zest, and lemon juice.
  • Pour the wet ingredients into the dry ingredients and mix until just combined.
  • Gently fold in the blueberries, being careful not to overmix.
  • Spoon the batter evenly into the muffin cups, filling each about two-thirds full.
  • Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and let muffins cool in the tin for 5 minutes.
  • Transfer muffins to a wire rack to cool completely.
  • Serve warm or at room temperature, and enjoy!
