- ½ teaspoon baking soda
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1/3 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- Zest of 1 lemon
- 2 tablespoons lemon juice
Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
In a large bowl, whisk together flour, sugar, baking soda, baking powder, and salt.
In another bowl, combine vegetable oil, egg, vanilla extract, lemon zest, and lemon juice.
