Ingredients
  

  • 2 cups green cabbage shredded
  • 1 cup purple cabbage shredded
  • 1 cup carrots julienned
  • 1 cup bell peppers thinly sliced
  • 1 cup cucumber julienned
  • 1/4 cup green onions chopped
  • 1/4 cup cilantro chopped
  • 1/4 cup sesame seeds
  • 1/3 cup rice vinegar
  • 1/4 cup soy sauce
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 1 teaspoon garlic minced

Instructions
 

  • Shred green and purple cabbage, julienne carrots, and slice bell peppers and cucumber.
  • In a large mixing bowl, combine shredded cabbages.
  • Add julienned carrots, bell peppers, cucumber, and green onions.
  • In a separate bowl, whisk together rice vinegar, soy sauce, honey, sesame oil, ginger, and garlic.
  • Pour the dressing over the vegetables and toss to coat.
  • Let the slaw sit for about 10 minutes to meld flavors.
  • Add chopped cilantro and sesame seeds to the slaw just before serving.
  • Taste and adjust seasoning with more soy sauce or vinegar if necessary.
  • Serve chilled or at room temperature.
