- 2 cups green cabbage shredded
- 1 cup purple cabbage shredded
- 1 cup carrots julienned
- 1 cup bell peppers thinly sliced
- 1 cup cucumber julienned
- 1/4 cup green onions chopped
- 1/4 cup cilantro chopped
- 1/4 cup sesame seeds
- 1/3 cup rice vinegar
- 1/4 cup soy sauce
- 2 tablespoons honey or maple syrup
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- 1 teaspoon garlic minced
Shred green and purple cabbage, julienne carrots, and slice bell peppers and cucumber.
In a large mixing bowl, combine shredded cabbages.
Add julienned carrots, bell peppers, cucumber, and green onions.
In a separate bowl, whisk together rice vinegar, soy sauce, honey, sesame oil, ginger, and garlic.
Pour the dressing over the vegetables and toss to coat.
Let the slaw sit for about 10 minutes to meld flavors.
Add chopped cilantro and sesame seeds to the slaw just before serving.
Taste and adjust seasoning with more soy sauce or vinegar if necessary.
Serve chilled or at room temperature.
